CARROT COOKIES WITH SWEET RED PEPPER

Time for pleasure without remorse! 

INGREDIENTS

500gr whole meal flour OR all purpose flour
150gr grated carrot
1 big sweet red pepper (cut in a food processor)
150ml olive oil
150ml lukewarm water
2 teaspoons salt
Sweet paprika, if desired

PREPARATION

Put all the ingredients, except for the flour, in a bowl and mix well with your hands.

Start pouring the flour slowly, while kneading.

Knead the dough until smooth and elastic.

Let the dough rest for 15 minutes.

Preheat the oven to 180 C.

Take some dough (size of a walnut)...

...and give it the shape of a ring.

Put a sheet of greaseproof paper onto a baking sheet and place the cookies.

Bake for 25-30 minutes, not more.

TIP: if the dough is sticky, oil your hands with olive oil and continue kneading.
