Provencal tomatoes make a stunning first course and an accompaniment for both meat and fish dishes and even pasta! They can make a main course, too!
4 tomatoes
8 slices sandwich bread without crust
3 cloves garlic, finely chopped
1 onion, finely chopped
Olive oil
Basil
Parsley
Spearmint, if wanted
Salt
Pepper
Thyme
PREPARATION
Sauté the onion and the garlic with plenty of olive oil in a frying pan.
Put the bread into a food processor.
Stir continuously until golden brown.
