INGREDIENTS:
• 1300 gr yellow pumpkin grated (clean weight)
• 200 gr sugar
• Cinnamon
• 250 gr golden raisins
• ½ wine glass olive oil
• 450 gr phyllo for pies or pastries
• Salt
PREPARATION:
Cut the pumpkin in half
and remove the seeds with a spoon.
Remove the outer skin and cut the pumpkin in small pieces, then grate it with a grater on the side with the big holes.
Move it to a strainer, add some salt and let it sit aside for ½ to 1 hour so it strains from the excess juices.
Afterwards squeeze it with your hands to help remove the excess juices and add it in a large bowl with the rest of the ingredients and mix together.
You can try the stuffing if it’s sweet enough or if you want to add sugar to sweeten it, same goes for the cinnamon as well.
Take a phyllo and smear it with oil, add another phyllo on top of that, smear it
and add some stuffing with a table spoon lengthwise on the phyllo
and role it up.
Add it in an oiled pan and continue with the rest of the ingredients. Then add some oil, sugar and cinnamon in a bowl and smear the mixture on the roles. That way the phyllo with crystalize while baking.
Bake in a preheated oven at 180C for 45-50 minutes. If you want you can sprinkle some icing sugar on top. It goes well with them.
