INGREDIENTS:
(for dough)
• 1/2 kg flour for all uses
• 1 sachet of dry yeast
• 1 tbsp. salt
• 1 tsp. sugar
• 1 small coffee cup olive oil
• 1 large coffee cup lukewarm water
(for stuffing)
• approximately 300 g feta cheese grated, might need less
• pepper
• few fresh leaves of fresh mint (it goes well)
PREPARATION:
In a large bowl add the flour, make a hole in the middle,
and add there the salt, sugar, yeast and olive oil. Begin mixing the ingredients together and slowly add the lukewarm water.
Knead well until the dough becomes pliable.
Cover it and let it rise for half an hour.
Afterwards divide it in balls.
Take each ball and open it, you can eve do it with your hands, in a round shape.
Take some filling with a teaspoon and cover the surface,
then cover with another dough that you opened up in the same shape and close up the edges by pressing them with a fork all around.
Add some oil in a pan and put in the dough on a low heat to cook them, careful so it picks color on both sides.
Remove them on paper towels so the excess oil is drained and serve them.
You can also knead the feta cheese in the dough and not cover the filling with another dough phyllo. I prefer it like this.
You can even fry the dough as it is and sprinkle some honey and cinnamon on top.
