PREPARATION:
Once you’ve washed the fish, salt it and let it in a drainer to drain the juices. Then chop the onions in thick slices.
Add some oil in a pan and sauté the onions (careful not to burn them, blacken them).
Remove them on paper towels, then flour and fry the fish. Place it in a platter once it’s done and mix it with the onions carefully so they go everywhere.
NOTE: You can do the same with gavro or maridaki types of fish. They’re delicious. It’s a recipe I tried in Chios and I liked it.
