This is an aromatic recipe with simple ingredients.
INGREDIENTS (serves 4)
400gr noodles
4 whole musky octopus (I used one octopus, instead of 4 musky octopus)
200gr cherry tomatoes, cut in half
Finely chopped garlic
Fresh fennel
Basil
Spearmint
1 wineglass retsina wine “MALAMATINA”(or white whine)
Sea salt
Pepper
PREPARATION
Boil noodles in salted water.
Simmer octopus in water until soft and strain.
Leave it to cool and cut into small pieces.
Stir octopus in some olive oil in frying pan (this will give a grilled taste).
Sauté the cherry tomatoes with olive oil in saucepan.
Add garlic...
...and quench with the wine.
As soon as the sauce is thickened,
add the octopus and the fresh herbs, combine with the noodles and serve with salad.
